- 300g leftover cooked rice
- 1 red pepper, deseededand finely diced
- 225g canned pineapple ringsin juice, drained
- 100g canned or frozensweetcorn, cooked
- 60ml Morrisons Eat SmartThousand Island Dressing
Place all the ingredients in a large bowl and mix thoroughly.
Drizzle with the dressing and toss well to serve.
