Crêpes Suzette

These perfect pancakes are delicious served with double cream.

Serves: 4
Preparation time: 5 minutes
Cooking time: 8 minutes


- 100g golden caster sugar
- Juice and zest of 2 oranges
- 1 tsp butter
- 4 pancakes
- Extra-thick double cream to serve


Add the sugar to a microwaveable bowl and stir in 3 tbsp orange juice. Microwave on high for 3-4 minutes until you have a bubbling caramel.

Remove from the microwave, then add the rest of the juice, half the zest and the butter. Return to the microwave and heat on high for 1 minute, stir, then cook for 1 more minute until the caramel has dissolved into the juice and you have a syrupy sauce. Set aside.

Make the pancakes as per the recipe. Serve each folded into quarters, pour over the sauce, add a spoonful of cream and a sprinkling of orange zest.
